Thai Soup Recipe

I posted this Thai Soup a couple weeks back and my DM’s filled up with people asking for the recipe! I wish I could say it was one of my recipes, but it is indeed from Elle Traiteur. They do catering for special events (corporate or private). BUT she was kind enough to pass on her recipe for Thai Soup so that I could share it with you!

ingredients

BROTH:

  • 4 cloves of garlic

  • 4 lemongrass sticks

  • 8 slices of ginger

  • 8 stems and leaves of coriander

  • 4 kaffir lime leaves

  • 1 tablespoon of red curry paste

  • 4 litres of chicken or vegetable stock

TOPPINGS:

  • rice vermicelli

  • vegetables of your choice (carrots, broccoli, bok choy, mushrooms, etc.)

  • green onions

  • cilantro leaves

preparation

For the broth, mix all the ingredients in a pot. Simmer on low heat for 3 hours to infuse the flavors. Strain the broth before serving. If you want a smoother broth you can add a can of coconut milk and reheat the broth.

For the garnish, cook the vermicelli according to the instructions on the package. Cut the vegetables into small pieces and blanch them. Chop the herbs finely.

Then assemble the vermicelli, vegetables and herbs in each bowl and pour the hot broth over them.
