Carey's Fish Tacos

Carey has been spending more time in the kitchen lately and I am loving every second of it. After playing around with a few recipes he came across on YouTube, he has mastered his fish taco recipe and he has agreed to let me share it! We usually tag team the recipe. Carey takes care of the fish and I tend to the cutting, chopping and preparing the salsa and cream sauce. If Carey is cooking on his own, he will make the salsa, cream sauce and handle the chopping ahead of time.

Ingredients:

1 lb wild caught Walleye (any white fish would work)

2 Tbsp Old Bay seasoning

1 cup of flour

1 cup of panko breadcrumbs

4 eggs

1/3 cup sour cream

3 Tbsp lime juice

1/4 cup chopped cilantro

1/4 cup green onion

1/3 cup red onion - finely diced

1/3 cup red cabbage - sliced

2 radishes - thinly sliced

1/3 cup tomato diced

2 tbs olive oil

Salt and pepper to taste

1 tbs jalapeño - finely diced

Can add sliced avocado and hot sauce if desired.

You can purchase tortillas at the store, but we prefer to make ours. Recipe will follow.

Directions:

  1. Prepare oil in cast iron pan over medium high heat. Let the oil reach a temperature of 360 degrees.

  2. Prepare the fish. If we are using fresh caught fish Carey will soak the fish in cold salt water for 30 minutes. Pat dry and season with fish seasoning (we use old bay). Cut fish in to bite size pieces. Prepare 3 shallow dishes one with flour, one with bread crumbs and one with eggs mixed well.

    Dip the pieces of fish in flour, followed by the egg and then cover with bread crumbs.

    Place in hot oil until lightly browned, flip until other side is nicely browned then pull off and place on a paper towel. Continue the process until all fish is cooked. You can also bake the fish at this point but the hubby insists on frying it, and it is delicious so I don’t complain!

  3. Make the salsa. Add onion, cilantro, jalapeño and 2 tbsp lime juice in a small bowl. Mix together.

  4. Mix together the sour cream, 1 tbsp of lime juice and a salt to taste.

  5. Prepare the tortillas. Recipe below.

  6. Assemble taco with fish, salsa, cream sauce and then top with remaining ingredients.

TORTILLA RECIPE 

Makes 4 tortillas 
Ingredients 

  • 4 Tbsp Oat Flour 

  • 3 Tbsp Almond or Coconut Milk 

  • 3/4 Cup Egg Whites 

Directions

  • Heat a small skillet on the stove over medium. Grease with olive oil. Let the pan get nice a warm. 

  • Wisk together all ingredients in a small bowl. Mix well then let sit for a minute or so. 

  • Pour 1/4 of the mixture into the pan. After about 1 minute flip the tortilla. You will cook similar to a pancake or a crepe. Avoid over cooking. 

  • Store any unused tortillas in the fridge.
