The Jennifer Aniston Salad

I’m obsessed with the podcast Smartless. If you haven’t listened to it, you need to check it out! I was recently listening to an old episode that Jennifer Aniston was on and they were discussing a chopped salad that Jen seems to always have on hand and I was intrigued. . . so I headed to Google and apparently the Jen Aniston salad is a thing! A big thing! Apparently, she ate this salad every day on set when filming Friends and according to the podcast, it’s something she still eats on the regular, so I had to give it a try! There are a lot of different variations of recipes online and I have no idea what the true Jen Aniston salad is, but I have landed on this one and I enjoyed it, so I thought I’d share it with you!

INGREDIENTs

 
  • 2 cups cooked bulgur wheat

  • 1 large chopped cucumber

  • 1/4 cup chopped parsley

  • 1/4 cup chopped mint

  • 1/4 cup chopped red onion

  • 1/4 cup chopped pistachios

  • 1 (150z) can chickpeas
    drained and rinsed

  • juice of 1 lemon

  • extra virgin olive oil to taste

  • salt & pepper

  • 1/2 cup crumbled feta

 

MIX AND ENJOY!

NOTE: Bulgur what was new to me, but is so easy to prepare! It’s pretty similar to quinoa, and would even say they could be interchangeable in this recipe.

I have no idea where this recipe originated from (there are so many versions online), so I have no idea who to give credit to for the recipe, but it is a good one! Let me know if you try it out and what you think. Would you eat it every day like Jen did?
