Heart Shaped Banana Pancakes

Happy Thursday gang! I am finally feeling 100 percent healthy again, thank goodness! I went from some sort of virus to a bad cold, to a sinus infection...ugh, it was an awful couple of weeks! Next week is not only Valentines day, but the hubby also has four days off, so I am relieved that I am feeling better in time for that! 
We have an unspoken tradition in our home. For just about every holiday I make a themed breakfast. It is usually nothing too fancy, just something fun to do. Just about every Valentine's day I make heart pancakes. We usually indulge on holidays, but this year I wanted to make healthy ones so that the baby could eat them as well. I tested them out last week, and they turned out great!

This recipe is so simple, but you can always add red and pink sprinkles to your normal pancakes to make them more festive. 
Banana Pancakes
Ingredients:

  • 2 Eggs
  • 1 ripe banana
  • 1/2 Cup of oat flour 
  • 1/4 Cup of applesauce 
  • 1 tsp vanilla 
  • 1/2 tsp cinnamon 


Directions:

  • Mash banana using a fork or blender.
  • Add other ingredients and mix well. 
  • Cook on skillet over medium, just like you would a normal pancake.
